Making Do

I am a master at stretching a dollar in my kitchen. I've done it so long it has become habit, and even with a budget a little more free, I still find myself doing it.
Today it was with pork. I recently purchased 2 very nice, thick cut pork chops at a greatly diminished price, something like $1.25. I coated them in a dry rub, topped with some smashed garlic, and drizzled with a little olive oil. Wrapped them up real tight in some aluminum foil and placed them in a lidded roasting pan on top of the wood stove. I put a spacer between the pan and stove so it would cook nice and slow.
After it was done, I shredded it and added it to a pan with some of my homemade salsamole and taco seasoning. I added some water and a can of drained black beans. At the same time I cooked 2 cups of rice seasoned with salsa and a little Mrs. Dash.
Shredded some lettuce that was fresh from the cold frame and we had some FABULOUS tacos for lunch.
I sliced a couple of apples and called it good :-)
Made enough so I can serve leftovers for dinner giving me a stress free and relaxing evening.
